Bar POS, tab management, and payments — without the bar fight.

Bars run on speed, trust, and tight liquor cost. Tabletop configures the POS, the tab flow, the inventory layer, and the payment program so service stays fast, shrinkage stays visible, and the program you run actually fits your liquor license and your guest profile.

What we hear on the ground.

What we hear from bar and tavern operators:

  • Open tabs walking out the door. POS doesn't lock cards on tab open, or the staff trained around the rule.
  • Liquor cost running 3-5 points higher than it should — and nobody has time to count bottles every Sunday.
  • Surcharge or cash discount programs run wrong, with signage that doesn't match what the POS actually does. Visa is watching.
  • Slow service at peak. Card swipes that take eight seconds because the gateway is queuing.
  • Payments processor and POS vendor pointing fingers at each other when a transaction declines on a Friday night.

How Tabletop solves it.

Concrete service layer for bars:

  • Tab management built in. Card pre-auth on tab open, automatic close at end of shift, and a clean reconciliation report your bookkeeper can actually read.
  • Liquor cost visibility. POS plus integrated inventory means theoretical-vs-actual pour cost is a real number, not a Sunday-night guess. Shrinkage shows up before it becomes a problem.
  • Program advice that respects your license. Surcharge is illegal on debit in some states; cash discount needs specific signage; dual pricing has its own compliance footprint. We pick the one that fits your state, your license, and your guest mix.
  • Fast settlement, fast support. Premium support with a human at the other end — not a Monday-morning ticket queue when you go down at 9pm Friday.
  • One vendor relationship. POS, payments, and inventory all under one phone number.

The stack we deploy.

Common pieces in a bar build:

  • Union POS — guest-led mobile POS engineered for high-volume rooms. QR/NFC tabs from the guest's phone, iPhone handhelds with Tap to Pay, 1,000+ tab management. The bar-specialist option when the room volume justifies the system.
  • Shift4 Dine (formerly Skytab) — POS with strong tab management, handhelds for floor staff, and integrated kitchen display for kitchens behind the bar.
  • Clover — right-sized for smaller neighborhood bars with simpler operations.
  • HotSauce — POS plus integrated marketing — useful for bars with active loyalty programs and event marketing.
  • Surcharge program — where the state allows it and the guest profile supports it.
  • Dual pricing program — for bars where surcharge isn't the right fit but cash savings still matter.
  • MarketMan — inventory and pour-cost integration for operators serious about liquor cost control.

What you actually save.

Real savings depend on your volume, your card mix, and your current program. The cost-analysis call surfaces:

  • Processing fees. Bars on the wrong program can run 3-4% effective. The right program for your state and your average ticket frequently moves that materially.
  • Pour-cost shrinkage. Bars without integrated inventory typically lose 2-5 points on liquor cost they could see. That's bigger than any processing-rate change.
  • Compliance exposure. A surcharge program run wrong is a Visa fine waiting to happen ($500 per occurrence). Getting the program and signage right is not optional — it's risk reduction with real dollar exposure.

Illustrative figure ranges only. Actual savings depend on your statement, your card mix, and the program you select.

Questions, answered.

Can we run surcharge in our state?

Depends on the state and the card type. Surcharge on credit is permitted in most states with proper disclosure; surcharge on debit is generally not permitted under network rules. We confirm what's legal where you operate before recommending a program.

How does tab management work on Shift4 Dine?

Card pre-auth on tab open holds an estimated amount on the card; tab gets closed at end of shift with a final auth for the actual amount. Walk-outs become rare because the auth is already on file.

Will the POS handle BYOB pricing structures?

Yes. BYOB operations get a different menu and pricing structure, and many run a corkage or food-only program. The POS handles both flows.

Can we run cash discount instead of surcharge?

Yes — and in some states cash discount is the right answer. The mechanics are different (debit residual gets baked into posted prices instead of surcharged at checkout), and the signage requirements are different. We walk you through which fits.

What about dram-shop and ID-check workflows?

POS can be configured to require ID verification for alcohol items and to flag specific behaviors for management review. Not a substitute for trained staff — but a useful backstop.
